500g beef and pork mince 
3 garlic cloves - minced 
1 tbsp lemongrass paste 
2 tbsp fresh minced ginger 
1 large spring onion - thinly sliced 
1/4 cup chives - diced 
1 tbsp tamari 
1.5 tsp sesame oil 

Fresh rice paper wrappers 
Garnish: Spring onions, coriander, sesame seeds 
Sauce: Chilli oil, tamari and Chinkang vinegar or rice vinegar 

Mix the first 8 ingredients in a bowl. 
Dip the rice paper sheet into some warm water until just soft. spoon roughly 1 tbsp of the mixture into the center of the sheet. 
Fold one side of the sheet away from you, and then do the same with the other side. Make sure to get as many air bubbles out as possible.

Thinly slice beef and marinate with all of your ingredients for 10 minutes at room temp 2. Then on medium high heat, heat up some olive oil. Once olive oil is hot, cook beef for 2-3 minutes un touched. 3. Then mix and cook for another 2-3 minutes un touched. Repeat this process until meat is cooked through. 4.
