RECIPE (serves 4)
1 butternut squash, peeled and cut into large cubes
1/2 cup ricotta
1 tsp finely chopped basil
1 tsp finely chopped mint
1 tsp finely chopped parsley
2 cloves garlic, minced
Zest of 1/2 lemon
Juice of 1/2 lemon
Olive oil
Salt & pepper
Crushed red pepper

Preheat oven to 400 F. Add the squash to a parchment lined baking sheet, drizzle generously with olive oil, and season with salt, pepper, and crushed red pepper.
