* 4 garlic cloves minced
* 1 cup yellow onion finely diced
* 1 tbsp Italian seasoning
* 1 1/2 tbsp tomato paste
* 1½ cups red lentils
* 1 tbsp gf tamari
* 2 1/2 cups vegetable broth
* 1 15oz can full-fat coconut milk
* 3 tbsp nutritional yeast
* 1 tsp sea salt
* 1/2 tsp ground black pepper
* 2 cups baby spinach 
* 1 tbsp lemon juice
* parsley for garnish

INSTRUCTIONS 
1. Heat a large skillet over medium heat and add the sundried tomatoes with oil included.
