The peak of the starter is when it has the most active/healthy bacteria and wild yeast. If you use it before it’s reached it peak, you won’t have as many yeast. And if you use it too long after, you have hungry yeast and bacteria - causing a more sluggish dough. You’ll know when your starter has reached its peak because it will have doubled in size & will be bubbly throughout the starter. The key to incredible bread starts with the starter! Obviously, this video isn’t for everyone and the average home baker definitely does not need this much starter. 😅 We only keep this much on hand to grow & dehydrate daily because we ship Eden out all over the world, everyday. My personal jar is definitely NOT this big. But, if you want to start a micro-bakery or for some reason need 15+ loaves for an event, then this is the video for you!   The ratios I would actually suggest using would be a 1:2:1 if you’re doing volume based (cups) or a 1:2:2 if you’re using grams. So for example: 1 part starter to 2 parts flour and 1 part water. Mandy | self-taught sourdough baker on Instagram: "There are a handful of ways to tell if your sourdough starter is ready to bake with, but here are my personal favorites: 🫙SIGN #1: it should double in size about 5-6 hours after feeding it (time is dependent on the temperature in your house). 🫙SIGN #2: there should be visible bubbles on the surface and on the sides of the jar. 🫙SIGN #3: the starter should have a light and airy texture - when you scoop a spoonful, of the starter, it should be fluffy and have a slightly stretchy quality to it. 🫙SIGN #4: a mature and healthy starter will have a pleasant, slightly tangy smell to it - there shouldn’t be an unpleasant odor to it (hints of acidity and fermentation are normal). 🫙SIGN #5: it should cling to jar when tilted.
