Tiropita is a very popular Greek dish, it’s crunchy, savoury and so easy to prepare. With only 3 main ingredients including feta, milk and eggs, the milk and baking powder makes the cheese pie fluffier, as we call it in Greek, “αφράτη - afrati”. You can tweak the recipe to make it your own, remember there are no rules in the kitchen. Save this recipe and don’t forget to tag me.

FETA FILLING~
1 1/2 packets filo pastry 
500g feta 
300g milk
3 eggs 
1 tsp baking powder

OLIVE OIL MIXTURE~
100g soda water 
100g olive oil 
1 tsp salt - mix these all together and set aside

MERHOD~
Preheat oven to 170 degrees 
Grease a 20x30cm (approx)pan
Crumble feta into small pieces.

Ingredients:  350g Ricotta cheese, crumbled or grated

I used a similar filling as i used for buerkas which i posted a few weeks back. This one is crunchier and flakier but not as rich as puff pastry. You can use any fillings you like, olives, tomatoes, fried onion, mushrooms..

Burek

Defrosted Filo dough sheets (if you bought a log, let it defrost in fridge overnight)
250g cottage cheese
130g Feta or Bulgarian cheese, crumbled
150g grated cheeses (pecorino, parmesan, mozzarella, cheddar.. any hard cheese works here) 
 1 egg
Salt and pepper to taste

Melted butter for brushing filo

Egg wash: 1 egg
Sesame
