Here is my go-to filling recipe but feel free to get creative. - 200g fatty pork mince - 20g ginger, grated - 2 spring onion chopped - 1 tbsp oyster sauce - 1 tbsp light soy sauce - ½ tbsp Shaoxing wine - 1 tsp sesame oil - Pinch of ground white pepper - ½ tsp cornstarch   Mix ingredients for the filling. Place a teaspoon in the centre of a wonton wrapper. Brush half of the edges with water then fold over (in half) to make a rectangular shape and enclose the filling. Brush one of the corners with water and fold inwards to overlap with the other corner. Press to seal. Prawn Wontons
- 24 wonton wrappers
- 400g prawn tails (200g blitzed to a paste, 200g chopped into chunks)
- 1 tbsp bamboo shoots, finely chopped
- 1 tbsp chopped chives 
- 1/2 tsp minced ginger
- 1 tbsp light soy sauce 
- 1/2 tsp sesame oil
- Pinch of salt
- Dash of ground white pepper
- 1/2 tbsp oyster sauce

Spicy Mayo
- 1/2 cup kewpie mayo
- 1 tbsp sriracha
- 1 tbsp chilli oil 

Mix all the ingredients for the filling then fold wontons. Shallow fry in hot oil until crisp and golden, about 3-4 minutes. Mix together spicy mayo and serve immediately.
