Whipping a meringue might just be one of the first milestones in a pastry chef’s career. Being able to produce a perfectly whipped meringue that’s glossy and shiny requires much more skill than the list of ingredients initially suggests.

A meringue is the backbone of many recipes due to its Swiss army knife characteristics. You can fold it into a ganache to increase volume or bake it to make an Eton mess. But you probably didn’t realize that you can use these techniques to actually set a meringue as a mold to pipe into.
