Quinoa Cucumber Salad with Feta, Dill & Mint | This was amazing! I used only 3/4 cup of quinoa and added arugala/basil to the mint tossed in. Also added mustard/white balsamic/honey to the dressing and barely any oil - much brighter that way. Included kalamata olives, orange cherry tomatoes, and pickled red onions - so colorful, flavorful, and fresh. Maybe my favorite thing I've made this summer!
