It is spicy, refreshing and goes perfectly with all sorts of foods from fried chicken to grilled fish! 😍  “Matah” means raw, so yes, traditionally the ingredients in this sambal are mostly raw. But over the years, it seems as if many people have adapted the recipe to fit their tastebuds.  Many people aren’t a fan of raw ingredients and find the chili, shallot and coconut oil taste too strong, so instead of using warm coconut oil to coat the raw ingredients (like the OG recipe), they use boiling hot oil so that the raw ingredients would cook slightly. Some people even go as far as to cooking all the raw ingredients with the coconut oil in a pan, but at tha Sambal Chicken, Balinese Food, Compound Butters, Flavored Vinegars, Coconut Oil Recipes, Compound Butter, Grilled Fish, Hot Oil, Thai Style
