Simply chop up a cabbage, and 1 Tb salt, massage to release its own juices (10 minutes) and pack into a GLASS (yes glass is best) jar. Top with cabbage leaves to hold the cabbage under the liquid (this prevents bad bacteria from growing, along with fermenting weights and seal with a fermenting lid. Let this ferment for a few days (up to 7 days depending on how hot it is). Foods ferment faster in the summer. When the sauerkraut tastes like a pickle, store the jar in the fridge. The sauerkraut will last for months!
