That’s where this recipe comes in! A big bowl of bright (fiber packed) flavors that will make your tummy and tastebuds happy! 

Ingredients: 
For the salad~
-3 red bell peppers, sliced
-2 medium red onions, quartered 
-2 cans of chickpeas, drained and rinsed 
-1 bunch of fresh parsley 
-3 cups cooked pearled couscous (1 and 1/3 cups uncooked) 
-1/2 cup crumbled feta 
-2 tbsp. olive oil (for roasting veggies)
