Did you know these were so easy to make? 

INGREDIENTS:
-Crust-
2 cups all-purpose flour
3/4 tsp salt
2 tbsp granulated sugar
8 tbsp cold unsalted butter
6-8 tbsp ice water
-Filling-
2 cups grated* coconut or coconut flakes
1/2 cup water
3/4 cup dark brown sugar (or to taste)
1 tsp mixed spice**
1/4 tsp salt
1/2 inch ginger, grated 
1 tsp vanilla extract
2 tbsp unsalted butter

*Grating is recommended, but if you blend the coconut like I did because I wanted multiple uses, don’t squeeze all the milk out completely as you typically would so that it retains moisture and flavor.

**Mixed spice is typically a ground mixture of cinnamon, nutmeg, allspice, cloves, anise, and ginger that can be purchased or made at home.
