This is my fragrant Thai Red Curry, I absolutely loved this curry. Packed full of flavour and so simple to put together, this will be your new Friday night favourite. Lets go: 

Ingredients: Serves 5 (541 calories | 43g protein per serving) 
1 onion chopped 
150g mangetout
1 red pepper 
1 tbsp minced ginger 
1 tbsp minced garlic 
1 red chilli chopped 
2 tbsp Thai red curry paste 
2 tsp cumin 
1 tbsp soy sauce 
1 tsp fish sauce 
1 tsp sugar 
150ml chicken stock 
400ml light coconut milk 
1kg bone in chicken thighs (sustainability sources where possible)

Garnish: 
1-2 tbsp spring onions 
Handful chopped coriander 
1-2 tbsp fresh chilli 
1 lime cut into wedges 

Method:
1. Heat a pan over low to medium hea Red Curry Fish, Chicken Red Curry, Thai Curry Chicken, Thai Red Curry Chicken, Fluffy White Rice, Pea Curry, Thai Red Curry Paste, Curry Fish, Red Curry Chicken
