You don’t need to stretch and fold your dough Stretch and fold is not absolutely necessary for a fluffy sourdough loaf, all the sourdough bread I make I NEVER stretch and fold not even once! 😜 You can make sourdough without doing all the crazy 30 minutes stretch and folds. You might not have a super long ferment like 48 hours but you’ll still get good bread that’s still good for your health 2. You DONT have to laminate your bread- sorry but I don’t have time for that! And honestly my counters aren’t big enough so I’m skipping that step, it hasn’t made a difference in my loaves!
