Se realizó un estudio descriptivo transversal para evaluar el riesgo de padecer diabetes en 140 derechohabientes no diagnosticados con diabetes, se compilaron datos a través de una encuesta confeccionada al efecto de la investigación, se realizaron mediciones antropométricas y se determinaron glucosa en ayunas, urea, creatinina, colesterol total y triglicéridos. We aimed to evaluate the effect of changes in dietary behaviours and lifestyle on weight gain during the COVID-19 lockdown in Chile. In this crosssectional analytical study, five surveys were condensed into a single 86-item online questionnaire comprising general and sociodemographic history, eating habits before and during confinement, measurement of the emotional influence on eating behaviour, lifestyle before and during confinement, and food safety. The survey was previously validated by experts in nutrition and public health and subsequently sent to 1000 potential participants of the university community; it was kept online for 28 days to be answered. Of the 639 respondents, the mean weight gain during confinement was 1.99 kg and 0.7 units of body mass index (BMI). The increases in dietary intake of most food groups were associated with greater weight gain, BMI and percentage weight gain. Lifestyle deterioration, worsening eating habits, and increased consumption of sweet or filled cookies and cakes were the main risk factors associated with weight gain. Only 2% of BMI changes were explained by the interaction between lifestyle changes and emotional influence, whereas 64% of changes were due to a deterioration in lifestyle during confinement. In conclusion, changes in dietary behaviours (mainly increased consumption of ultra-processed foods), as well as quality of life deterioration were the main factors associated with weight gain during lockdown.

El objetivo de este estudio fue evaluar extractos vegetales de plantas que crecen comúnmente en el estado de Puebla y que puedan inhibir a C. gloeosporioides. Extractos oleosos y etanólicos de hojas de capulín (Prunus serotina subsp. Capuli), nogal (Juglans regia), pirul (Schinus molle), ruda (Ruta chalepensis) y marubio (Marrubium vulgare) fueron obtenidos, y se determinó la concentración mínima inhibitoria (CMI), empleando diferentes concentraciones de extractos oleosos y etanólicos (150 a 2000 mg L-1). Todos los días invariablemente un alimento de consumo popular en la mesa semanal y a cualquier ho... more Todos los días invariablemente un alimento de consumo popular en la mesa semanal y a cualquier hora del día es el pan, actualmente para sectores de la población la modificación en sabores, texturas y composición poseen auge en el comercio. La sustitución de la harina de trigo por diferentes cereales, leguminosas o ingredientes funcionales abarcan espacio en panadería tradicional como en las panaderías del centro comercial. El polen de abeja es un alimento saludable ya que posee 30-35 % de proteína en forma de aminoácidos esenciales por arriba del patrón. Sus capas de ectina y exina permiten al polen no ser tan digerible al ser humano, por lo que un producto horneado favorecería su aprovechamiento. En esta investigación se va a establecer la formulación adecuada para integrar la harina de polen a un pan blanco de masa salada hasta donde sensorialmente no se detecte la adición, así como estandarizar la metodología de panificación. Tomando en cuenta parámetros como: Cantidad de harina de trigo-polen y azúcar, tiempo de fermentación, tiempo de horneo y temperatura de horneo. El producto obtenido es valorado sensorialmente para determinar la concentración de harina y cuál es el porcentaje de adición mejor evaluado sensorialmente, el rango de adición aceptado es de 5 a 10 % de sustitución de harina de trigo. Sensorialmente no existe diferencia en atributos como color, olor, sabor, consistencia y textura en este rango, siendo ligeramente mejor el sabor a 10% de Harina de polen. No obstante el pan blanco obtenido se puede comercializar hasta 10% de adición, siendo alternativa de los apicultores para obtener ganancias extras no solo de la venta de miel.
Objective: Although menopause is a natural event in a woman's life, some of its symptoms can be s... more Objective: Although menopause is a natural event in a woman's life, some of its symptoms can be severe enough to adversely affect her health. There is some evidence to suggest that diet has an influence on menopausal symptoms, but less attention has been paid to dietary patterns. The purpose of this study is to determine the association of dietary patterns with physical, mental, and genitourinary menopausal symptoms. Methods: A cross-sectional study design was applied using a sample of 400 postmenopausal women who attended health centers in the south of Tehran, Iran. The menopausal symptoms were assessed by a Menopause Rating Scale (MRS) questionnaire; a 147-item, semi-quantitative food-frequency questionnaire was used to collect dietary information, and major dietary patterns were identified by principal component analysis. Linear regression was used to evaluate the relationship between menopausal symptoms and dietary patterns. Results: Three major dietary patterns were identified: vegetables and fruits (VF); mayonnaise, liquid oils, sweets, and desserts (MLSD); and solid fats and snacks (SFS). It has been found that the VF dietary pattern is inversely associated with general (b ¼ À1.37; SE ¼ 1.08; P for trend <0.001), physical (b ¼ À1.54; SE ¼ 1.09; P for trend <0.001), and mental (b ¼ À1.58; SE ¼ 1.11; P for trend <0.001) symptoms. A stronger adherence to the MLSD dietary pattern was directly associated with general (b ¼ 1.15; SE ¼ 1.08; P for trend <0.001) and genitourinary symptoms (b ¼ 1.54; SE ¼ 1.1; P for trend <0.001). Moreover, the SFS dietary pattern was directly related to the general (b ¼ 1.23; SE ¼ 1.09; P for trend ¼ 0.01), physical (b ¼ 1.24; SE ¼ 1.09; P for trend ¼ 0.04), and mental (b ¼ 1.29; SE ¼ 1.12; P for trend < 0.001) symptoms. Conclusion: The present study demonstrated that there is an inverse association between VF dietary pattern and menopausal symptoms. In contrast, the MLSD and SFS dietary patterns were correlated to an increased risk of these symptoms.

Las larvas fueron recolectadas en el árbol hospedero Parkinsonia praecox (Manteco), por habitantes de la comunidad Popoloca, municipio de Zapotitlán Salinas, Puebla. En el laboratorio se secaron y molieron obteniendo una harina con tamaño de partícula adecuado para el análisis químico- proximal, aminograma por HPLC, digestión enzimática y análisis microbiológico. We conducted a national retrospective cohort in two different sets of patients from the Mexican COVID-19 Epidemiologic Surveillance Study. To develop the model, we included 264,026 patients tested for SARS-CoV-2 between February 28 and May 30, 2020. The research efforts to elucidate the mechanisms of damage associated with aging have also been significantly increased, especially in order to avoid the reduction of the cognitive abilities in geriatric patients, resulting from the damage generated mainly at the level of the hippocampus during old age. However, lockdowns have led to changes in lifestyle, emotional health, and eating habits. We aimed to evaluate the effect of changes in dietary behaviours and lifestyle on weight gain during the COVID-19 lockdown in Chile. In this crosssectional analytical study, five surveys were condensed into a single 86-item online questionnaire comprising general and sociodemographic history, eating habits before and during confinement, measurement of the emotional influence on eating behaviour, lifestyle before and during confinement, and food safety. The survey was previously validated by experts in nutrition and public health and subsequently sent to 1000 potential participants of the university community; it was kept online for 28 days to be answered. Of the 639 respondents, the mean weight gain during confinement was 1.99 kg and 0.7 units of body mass index (BMI). The increases in dietary intake of most food groups were associated with greater weight gain, BMI and percentage weight gain. Lifestyle deterioration, worsening eating habits, and increased consumption of sweet or filled cookies and cakes were the main risk factors associated with weight gain. Only 2% of BMI changes were explained by the interaction between lifestyle changes and emotional influence, whereas 64% of changes were due to a deterioration in lifestyle during confinement. In conclusion, changes in dietary behaviours (mainly increased consumption of ultra-processed foods), as well as quality of life deterioration were the main factors associated with weight gain during lockdown.

Penz. & Sacc., es el agente causal de la antracnosis, una enfermedad que causa pérdidas considerables en la producción de frutos tropicales. El objetivo de este estudio fue evaluar extractos vegetales de plantas que crecen comúnmente en el estado de Puebla y que puedan inhibir a C. gloeosporioides. Extractos oleosos y etanólicos de hojas de capulín (Prunus serotina subsp. Capuli), nogal (Juglans regia), pirul (Schinus molle), ruda (Ruta chalepensis) y marubio (Marrubium vulgare) fueron obtenidos, y se determinó la concentración mínima inhibitoria (CMI), empleando diferentes concentraciones de extractos oleosos y etanólicos (150 a 2000 mg L-1). Todos los días invariablemente un alimento de consumo popular en la mesa semanal y a cualquier ho... more Todos los días invariablemente un alimento de consumo popular en la mesa semanal y a cualquier hora del día es el pan, actualmente para sectores de la población la modificación en sabores, texturas y composición poseen auge en el comercio. La sustitución de la harina de trigo por diferentes cereales, leguminosas o ingredientes funcionales abarcan espacio en panadería tradicional como en las panaderías del centro comercial. El polen de abeja es un alimento saludable ya que posee 30-35 % de proteína en forma de aminoácidos esenciales por arriba del patrón. Sus capas de ectina y exina permiten al polen no ser tan digerible al ser humano, por lo que un producto horneado favorecería su aprovechamiento. En esta investigación se va a establecer la formulación adecuada para integrar la harina de polen a un pan blanco de masa salada hasta donde sensorialmente no se detecte la adición, así como estandarizar la metodología de panificación. Tomando en cuenta parámetros como: Cantidad de harina de trigo-polen y azúcar, tiempo de fermentación, tiempo de horneo y temperatura de horneo. El producto obtenido es valorado sensorialmente para determinar la concentración de harina y cuál es el porcentaje de adición mejor evaluado sensorialmente, el rango de adición aceptado es de 5 a 10 % de sustitución de harina de trigo. Sensorialmente no existe diferencia en atributos como color, olor, sabor, consistencia y textura en este rango, siendo ligeramente mejor el sabor a 10% de Harina de polen. No obstante el pan blanco obtenido se puede comercializar hasta 10% de adición, siendo alternativa de los apicultores para obtener ganancias extras no solo de la venta de miel.
Objective: Although menopause is a natural event in a woman's life, some of its symptoms can be s... more Objective: Although menopause is a natural event in a woman's life, some of its symptoms can be severe enough to adversely affect her health. There is some evidence to suggest that diet has an influence on menopausal symptoms, but less attention has been paid to dietary patterns. The purpose of this study is to determine the association of dietary patterns with physical, mental, and genitourinary menopausal symptoms. Methods: A cross-sectional study design was applied using a sample of 400 postmenopausal women who attended health centers in the south of Tehran, Iran. The menopausal symptoms were assessed by a Menopause Rating Scale (MRS) questionnaire; a 147-item, semi-quantitative food-frequency questionnaire was used to collect dietary information, and major dietary patterns were identified by principal component analysis. Linear regression was used to evaluate the relationship between menopausal symptoms and dietary patterns. Results: Three major dietary patterns were identified: vegetables and fruits (VF); mayonnaise, liquid oils, sweets, and desserts (MLSD); and solid fats and snacks (SFS). It has been found that the VF dietary pattern is inversely associated with general (b ¼ À1.37; SE ¼ 1.08; P for trend <0.001), physical (b ¼ À1.54; SE ¼ 1.09; P for trend <0.001), and mental (b ¼ À1.58; SE ¼ 1.11; P for trend <0.001) symptoms. A stronger adherence to the MLSD dietary pattern was directly associated with general (b ¼ 1.15; SE ¼ 1.08; P for trend <0.001) and genitourinary symptoms (b ¼ 1.54; SE ¼ 1.1; P for trend <0.001). Moreover, the SFS dietary pattern was directly related to the general (b ¼ 1.23; SE ¼ 1.09; P for trend ¼ 0.01), physical (b ¼ 1.24; SE ¼ 1.09; P for trend ¼ 0.04), and mental (b ¼ 1.29; SE ¼ 1.12; P for trend < 0.001) symptoms. Conclusion: The present study demonstrated that there is an inverse association between VF dietary pattern and menopausal symptoms. In contrast, the MLSD and SFS dietary patterns were correlated to an increased risk of these symptoms.

La Entomofagia es el consumo de insectos, se ha reportado que los insectos tienen gran cantidad de proteínas y en la actualidad se necesitan fuentes proteicas para combatir el hambre, la población crece y las reservas proteicas no aumentan, en el presente trabajo se propone el estudio de la larva de Paradirphia fumosa. Las larvas fueron recolectadas en el árbol hospedero Parkinsonia praecox (Manteco), por habitantes de la comunidad Popoloca, municipio de Zapotitlán Salinas, Puebla. En el laboratorio se secaron y molieron obteniendo una harina con tamaño de partícula adecuado para el análisis químico- proximal, aminograma por HPLC, digestión enzimática y análisis microbiológico. Con los datos obtenidos de digestibilidad y del aminograma se realizó el cálculo de aminoácidos de las proteínas corregidas según su digestibilidad (PDCAAS).
