The aimed of this research wa to study the effect of raw material type, sugar concentration and t... more The aimed of this research wa to study the effect of raw material type, sugar concentration and the ammonium sulfate (ZA) concentration in the multiplication of nata starter (Acetobacter xylinum) on the quality of nata de soya. This research used a complete randomized design with 3 factors: the type of raw material (liquid waste of coconut and liquid waste of tofu), sugar concentration (10% and 15%), and ZA concentration (0,4, 0,6% and 0,8%). Thus, there are 12 combinations of treatment with repetition, or 36 sets of trial. Parameter analyzed on nata de soya were yield, thickness, pH value, texture and organoleptic. The best result with characteristics 1,07 cm thickness, 2,73 pH value and 85,28 texture was obtained used liquid waste of coconut combined with 10% sugar concentration and 0,6 ZA concentration.
