Recipe:
- 1 chicken breast, diced
- 1/2 cup diced bell peppers
- 1/4 cup red onions
- 1/4 cup black beans
- 1/4 cup fire-roasted diced tomatoes
- Fajita seasoning (made my own)
- 1/2 cup Trader Joe’s organic jasmine rice
- 1/4 cup shredded cheese

### Toppings:
- Pico de gallo
- Greek yogurt or sour cream (optional)

### Instructions:
1. Assemble bowls with chicken, bell peppers, onions, tomatoes, beans, and fajita seasoning.
