60g butter
60g onion, brunoise
10g garlic, minced
200g risotto rice
120g white wine
600g Chicken Stock
30g butter, for finishing
30g grated parmesan cheese
Salt & pepper to taste

Step 1: Bring a sauce pan to medium heat, add the butter, onions, and garlic. Seat until translucent. Making sure the garlic doesn’t brown.

Step 2: Add the risotto rice and saute for a minute or two so that it is coated with the butter.

Step 3 : Add the white wine and reduce until it the alcohol flavor has cooked off. Slowly add the chicken stock stirring the rice constantly as it cooks.
