these tofu mince & vegan egg yolk recipes absolutely blew my mind the first time I tried them, put them together with some congee aka chinese rice porridge & you’ve really got something special x

ingredients (makes 1 bowl)

50g jasmine rice, only washed once
300ml vegetable stock
150ml water
1 garlic clove, minced
1cm ginger, minced
chilli crisp for topping
tamari for topping (or soy sauce)
spring onion for topping
sesame seeds for topping, toasted

for the tofu mince

100g firm tofu, crumbled
1 small garlic clove, minced
1/2cm ginger, minced
1/2 tbsp doubanjiang
water to loosen

for the ‘egg yolk’

1/2 tbsp nutritional yeast
1/4-1/2 tsp black salt (adjust to taste)
1/4 - 1/2 tsp orange food colouring
