If you bash a portion of tofu bacon on top of these silken tofu pancakes there’s over 50g of protein in the full batch.  Ingredients (makes 8 pancakes) 300g silken tofu 1 cup plain flour 300 ml non-dairy milk 2 tbsp brown sugar 1 tsp vanilla extract 1 tsp baking powder Pinch of salt Oil for frying To serve: 200g of tofu bacon (check out our BLT for the method) + maple syrup  Instructions 1. Whisk all of the pancake ingredients together until you have a smooth batter. 2. Heat up a little oil in a frying pan over medium heat. 3. Pour 1/3 of a cup of the batter into the pan.
