TWD - A Big Banana Cake

This week’s Tuesdays with Dorie recipe is A Big Banana Cake. The original is a three layer banana cake containing allspice and Greek Yoghurt, topped and filled with biscoff cream cheese frosting.

I didn’t have an immediate use for a big banana cake, so I made a half recipe and turned it into 12 cupcakes instead.

I made a third of the frosting recipe which was more than enough to frost the 12 cupcakes.

The highlight for me was the biscoff cream cheese frosting - it’s so good.

Adam Liaw’s Lemon and Ricotta Cake

This week, I made Adam Liaw’s Lemon and Ricotta Cake recipe.
 

This light lemony cake doubles as a dessert with icecream or custard.

I enjoyed this cake heated slightly just on its own with a cuppa.

Look at the texture - lush! It comes from the ricotta and olive oil in the cake.

This recipe is a “keeper”.

TWD - Biscuits Rose

This week’s Tuesday with Dorie recipe is Biscuits Rose. These pink tinted meringue cookies are Dorie’s version of Biscuits Roses de Reims, an 18th century treat.

“Biscuit” means twice baked. These cookies are not actually baked twice in the oven, but they are dried in the air before baking.

These cookies look pretty, and taste ok, but as Dorie notes, they are not very sweet. For that reason, they are not my cup of tea.

TWD - Marbled Cheesecake

 This week’s Tuesday with Dorie recipe is Marbled Cheesecake. The cheesecake is a combination of vanilla and chocolate, with a biscuit base.

The cheesecake is a traditional baked cheesecake, baked in a waterbath in the oven.

The recipe made a massive cheesecake, with nearly a kilo of cream cheese in the filling. I halved the filling, which made a more manageable and economical cheesecake.

The chocolate cheesecake batter is made by combining a chocolate and coffee syrup mixture with a third of the vanilla batter.

I used Malt O Milk biscuits for my cheesecake’s biscuit base.

As a cheesecake lover, I enjoyed this tasty dessert.

TWD - Brown Sugar Oat Squares

 Today’s Tuesday with Dorie recipe is Brown Sugar Oat Squares.

Not dissimilar to Scottish flapjacks, these tasty albeit plain squares get their flavour from oats and brown sugar. By baking for a slightly shorter time, you get a soft, caramel like centre in the squares.

TWD - Brioche Sandwich Buns

This week’s Tuesdays with Dorie recipe is Brioche Sandwich Buns. A rich brioche dough is formed into buns for your favourite sandwich filling.

The buns have nice browned crusty tops, the way I like my bread rolls.

TWD - Coffee Shortbread

This week’s Tuesdays with Dorie recipe is Coffee Shortbread. As well as being flavoured with coffee, this shortbread contains cardamom and lemon zest.

The shortbread is easy and quick to make in a round cake tin, and is very tasty.
