Whitney Berge on Instagram: "BLACK CHOCOLATE GANACHE   If you ever make a Black colored cake, covering it with a Chocolate Ganache is a great option. When working with a ganache, I find that working with the cold/frozen cakes is usually the best route because it will set up faster. And when you go to freeze again after decorating, there is a very low chance that it will have any condensation happen.  To make the black ganache, I made my semi sweet chocolate ganache, and let it cool off for about an hour. I also put it into the fridge to cool it just a bit more before using. I transferred the amount to a liquid measuring cup and used @Chefmaster “Coal Black” color. Mix well until combined. I always recommend starting with 3-4 drops and building up the color if needed. 1️⃣ Start with a dark coloured buttercream, such as chocolate. This provides a head start towards achieving a deep black colour. 

2️⃣ @colour.mill Oil Blend colours are pigments rather than dyes and will stick to your mixture instead of dissolve, creating stronger brighter colours that are streak-free!

3️⃣ Add the black colour in small amount, mixing thoroughly after each addition. 

4️⃣ The colour would become deeper over time. The utilisation of a hand blender significantly expedites the process of achieving a rich deep black shade. 

I also used Colour Mill to colour my chocolate ganache black, which can also be very challenging to achieve deep rich colours with. Ganache recipe : 

8 oz Dark Chocolate 
6 oz Manufacturing cream or whipping cream 

Melt your chocolate over hot water until completely melt move it away from the hot water. 
Add your cold whip or manufacturing cream

Size - 8” (diameter) 10” height
Flavor- 3x Chocolate Mousse
Frosting - TBWB American Buttercream frosting

To achieve the Black, I started with my chocolate ganache and added it to my buttercream frosting, and then added black cocoa added. No food color needed!

To get the Grey colors, I used a small amount of the black chocolate buttercream, and added it to more white buttercream.

For the Gold paint, I used @fancysprinkles Gold Prism Powder and a splash of @wiltoncakes clear vanilla extract. 

For this cake, I did a 3 parts Prism Powder to 1 part vanilla extract. Then I applied it with a food safe paint brush.
