Fresh chopped broccoli and Colby jack cheese rolled in Panko crumbs, then air fried until crunchy and golden brown. The perfect combination of crispy and creamy in every bite makes them an irresistible snack or appetizer!

I use old, sharp cheddar cheese, but you can use the cheese of your choice. Panko bread crumbs are always my go to but Italian will do nicely too. When I made these, I didn't have shallots on hand, so I used red onions which sufficed just nicely. Make them up and your family and friends will just love them. Ingredients: 1 ½ cups finely chopped broccoli, cooked 1 cup shredded cheddar cheese ½ cup panko bread crumbs ¼ cup grated Parmesan cheese 2 large eggs, beaten 2 tablespoons all-purpose flour 1 clove garlic, minced Salt and pepper to taste ½ teaspoon paprika 1 tablespoon olive oil (for brushing or frying)
