Any “Gateau” (or as we call them in French “Entremets”) follows the simple rule of three textures: Soft (usually some sort of sponge), Creamy (mousse, inserts, curds, etc) and a layer of crunch. Crunch will be the consolidation of the other two, the one that will bring the added “je ne sais quoi” to a cake! That’s why this is my “Patisserie tip” of the day. My personal favourite way of adding “crunch” to a cake is by making some simple crumble, and then roughly mixing it with nuts. But once this is added to the cake, the overall moisture of the cake will - without fail - turn your crunch into a soggy layer. But have you noticed that when you add a crunchy layer to your cake, it ends up getting soggy due to all the cake moisture?

A great hack from @zazamarcelle that I've tried is to use cocoa butter to coat the crunchy mix.This will literally “waterproof” your crunch layer, without adding any extra sweetness to it. Cocoa butter can be hard to find so coconut oil is also a good substitute!

The result: a cake with 1,2,3 or more thin layers of crunchiness that will STAY crunchy a few days down the line 🤤

Isabelle Boizis on Instagram: "🥥 Here is the absolute best way to add crunch to a cake (to a COCONUT flavoured cake!) - my Coconut Crunch! 🥥😍  Here’s the recipe:  40g plain flour 50g sugar (I like to use golden caster sugar or light brown sugar but normal caster sugar will do fine) 50g butter 25g ground coconut (simply take desiccated coconut and blitz it to have a powder) 15g of desiccated coconut  Put everything in the bowl of a mixer and mix with the paddle attachment until you get a crumble consistency. Pour onto a tray and bake at 165ºC until evenly golden. Leave to cool.  When it’s ready to use, coat with some melted cocoa butter to make it “waterproof” and avoid it getting soggy when in contact with your filling and use between layers to add extra crunch to your cake.
