You can fry it up into small discs in a pan or even bake it for a healthier version. I’m using an Ejjeh pan but you can also do this in a regular frying pan. Also feel free to mix and match your herbs. Get creative!

2 bunches parsley
2 bunch mint
2 bunches green onions
3 cloves garlic
1 tsp paprika
1/2 tsp sumac
Salt and pepper to taste 
5 eggs

Chop up all the ingredients fine and mix together in a bowl. Heat a frying pan on medium-high heat. Add some oil and fry about a 1/4 cup of the mixture at a time to make little discs Or do it all in one big pan and cut it up. Flip to crisp on both sides.
