Shibazuke is a traditional Japanese pickle (tsukemono) that originates from Kyoto. It is typically made with summer vegetables like eggplants, cucumbers and myoga (Japanese ginger) pickled with salt, and red perilla leaves called aka shiso which gives it the iconic purple color.
