Purvhee on Instagram: "Green Khichu  Note: If you like khichu with mooshy texture make sure to increase water by 1/2 cup so instead of 3 cups add 3.5 cups of water!   Ingredients  1. 1/2 bunch of Kothmir/Coriander 2. 4-5 medium spicy green chilies 3. 3 cups of water 4. 1.5 tsp ajmo/carom seeds 5. 1 tsp jeeru/cumin seeds 6. 1 tsp or to taste salt 7. 1/2 tsp minus pinch full Baking Soda 8. 1.5 cups of Rice Flour 9. 4 chopped spicy thai green chilies 10. Peanut oil 11. methi masala aka achar masala 12. chopped Green garlic   Directions 1. Add Kothmir & green chilies in a food processor and make a coarse mixture! 2. Now in a wide pan add water, ajmo, jeeru, salt, prepared kothmir chili mixture & cover….let it simmer for 6-8 minutes 3. This rainy weather calls for khichu & this one made from bajra just tastes amazing. Let’s make this.

Wearing @sfh_kolkata 

Serves 2
1 cup bajra
1 cup rice flour
3-3.5 cups water
2 green chillies 
1 inch piece of ginger 
Salt to taste
Pinch of hing
1 tbsp jeera
1 tbsp ajwain
10-15 curry leaves
Handful of coriander leaves, finely chopped 
Pinch of baking soda
Blitz the bajra to a coarse powder. Pound green chillies & ginger coarsely. Heat water in a pan. Add the salt, hing, jeera, ajwain, curry leaves, coriander leaves, pounded ginger & green chillies & let it come to a boil. Add the baking soda & wait for 30 seconds before adding in the bajra & rice flour. Mix well till there are no lumps.
