This was crisp on top and light and fluffy on the middle. 

Here’s the recipe:
228g of angel food cake mix
140g crushed pineapple from a can
1/4 cup water

Mix well and add silicon cups to a muffin tin.  Divide batter evenly among 12 cups.  Bake at 350 for 32 mins. 

Allow to cool before topping.
