Ingredients
- 2 baking potatoes 
- 2 chicken thighs (double if meal prepping)
- 2 tsp curry powder
- 1 tbsp olive oil (or low calorie spray)
- Salt and pepper
- Chives (for garnish)

For the curry
1 tbsp mango chutney
1 tsp curry powder
½ tsp turmeric 
4 tbsp light mayo

Method
1. Season your baking potatoes with olive oil, salt and pepper and pierce the potato with a fork. Pop into the airfryer for 30 minutes at 200
2. While the baked potato is cooking, marinate your chicken thighs in 2 tsp of curry powder
