While I love whipped ganache, I only use it to fill my cakes. For the protection dam, crumb coat and covering I always use buttercream! So I’m always making buttercream, the same way I’m always making whipped ganache 😂

My recipe is not your usual 2:1 sugar to egg whites ratio! Mine uses less sugar than egg whites, resulting in a true less sweet buttercream that tastes like ice cream 🍦!
