Today I’m gonna put on you on the most seriously underrated Pakistani dish, which definitely tops Butter Chicken. There are never any leftovers! Known as ‘Malai Gosht Handi’ in Pakistan, it is traditionally served in a Handi (a clay pot), hence the name. We typically associate creamy curries with a sweet Indian Butter Chicken, but this is different. A couple notable differences are firstly; this has no sugar in it and has pepper (as with most Pakistani curries), so no sweet curry here. Secondly and most importantly, there are no onions in this recipe! Which is a nice departure from your classic saalan. Also, don’t worry this recipe super easy, it doesn’t require blending 🙃. INGREDIENTS: - 1½ kg lamb (or mutton) - ⅓ cup oil or ghee - 1 cup water - 1 cup crushed tomatoes (or 1 can) - 1 cup yogurt - 1 cup double cream (set some aside for garnish) - 3 tbsp ginger garlic paste - 1 tsp chilli flakes - 1 ½ tsp Kashmiri chilli powder (or ½ tsp chilli powder & 1 heaped tsp paprika) - 1 tsp coriander powder - 1 tsp cumin powder - 1 tsp turmeric - 1 ½ tsp pepper - 1½ tsp salt (according to taste) - 1 ½ tbsp Kasoori methi (dried fenugreek leaves) - Coriander (for garnish) - 3 tbsp butter (for garnish/ optional) (you can also cook it out) INSTRUCTIONS: 1. In a large pan, heat oil over medium-high heat. Add lamb and cook for 5 mins till colour changes. 2. Add in ginger garlic paste, cook for a couple of minutes until fragrant. 3. Heat a knob of butter in a large frying pan and add the leeks along with the garlic and mix well and stir fry for around 5 minuets Once the leeks have softened add the flour and crumble in the stock cube, mix well with the leeks then gradually add the milk stirring constantly, then add the single cream along with the Parmesan and stir it in until the Parmesan has melted and it comes to a gentle simmer. Finally add the shredded chicken and mix again. Remove the pan from the heat. In a large baking dish spoon a little of the leeks along and chicken mixture into the bottom and use the back of a large spoon to spread it across. Then add a layer of potatoes, followed by a generous amount of the chicken and leek filling and spread it over the potatoes. 1 teaspoon garlic powder
1 teaspoon onion powder

1 teaspoon seasoned salt

——bang bang sauce——
1 cup mayonnaise
1/2 cup sweet chili sauce
2 tablespoon chili garlic sauce or Sriracha
 Directions:
1. Score the chicken breasts about 1/8-inch deep and 1/2-inch apart. Make cross-hatch cuts. Mix all the spices together (garlic powder, onion powder, paprika, seasoned salt) and season the chicken breasts on both sides.
2. Make the bang bang sauce - mix together the Mayo, sweet chili sauce and chili garlic sauce or sriracha. Make sure you reserve about a couple tablespoons of the sauce for drizzling on top when serving the dish.
3. Place the chicken breasts in the air fryer basket and spread about 2 tablespoons of the bang bang sauce on top, then air fry at 390° for about 20 minutes depending on the size of the chicken breasts or until the internal temperature hits 165 degrees.
