These einkorn flour biscuits use a fold and chill method to help rise them into a fluffy bread. Though einkorn wheat isn't without gluten, the structure of the gluten is weak and a completely different type than modern wheat. Einkorn is the original wheat that has never been hybridized and contains only 14 chromosomes as opposed to 42 in modern wheat. It can be tolerated by many with gluten intolerance and is much more easily digestible. In addition, it contains high protein content and huge amounts of more readily available nutrients. This is a healthy choice for baking and has a sweet light nutty flavor. Our favorite biscuit recipe!
