CANNED SHREDDED ZUCCHINI FIRST.. you shred your zucchini press out all the moisture you can from your zucchini and pack tightly into quart size jars. Next pour boiling water over top leaving 1/2 inch to 1 inch head space. run a knife in the middle to get all bubbles out Add tsp of salt to each quart Put into canner and bring to TEN POUNDS PRESSURE.. then SHUT IT OFF and let the temp drop naturally.
