Jodie on Instagram: "OSSO BUCCO 🥩  Comfort food at its best 😋 I love cooking this dish a day or two ahead, the sauce always tastes so much better.   A little tip before reheating, scoop out all the solidified fat that’s risen to the top. If you like your sauce silkier, drain sauce then add back to slow cooker.   4 -5 x veal/beef osso bucco.  Flour  Olive oil  1 leek, could use onion, chopped  1-2 carrots, diced 4 garlic cloves. 1-2 celery stalks, diced 4-6 french shallots, peeled & sliced in half. Half bunch thyme. 1 cup beef stock. 1/4 cup tomato paste. 1.5-2 cups full bodied red wine. S&P  Coat the meat in flour & S&P, cook in a non stick frypan in oil browning meat cooking approx. 3 min each side.  Set aside.  Blitz leek, garlic, carrot & celery in a blender. Most pasta dishes are easy enough to make at home (and I can make them the way I like it)... but the BEST Osso Buco is still going to be homemade because you can taste as you go and make everything perfect.

Ingredients
	•	3 Veal or Beef Shanks (2in [5cm] Thick)
	•	1/2c Flour (Salted and Peppered)
