Yes, you can absolutely use it for sourdough. But here’s the catch: it’s an all-purpose flour, which means it has a lower protein content than bread flour. And that means your usual sourdough recipe might not work the same way. Here’s how to fix it: 🔑 Lower the hydration in your recipe! I’ve found that a hydration level between 65-68% works best with this flour. Bread flour has a higher protein content, which creates more gluten development. INGREDIENTS 100 g (1/2 cup) active sourdough starter ⁣ 350 g (1 & 1/2 cup) water 500 g (3&1/4 cup) unbleached bread flour⁣ 8 g (1 tsp) salt INSTRUCTIONS In a large bowl combine all ingredients. Mix well so that all of the flour has been absorbed. Cover and let ferment for 8-10 hours. Once the dough has doubled in size. Gently stretch into a rectangle and then fold up into a rough ball. And you only need 1 ingredient to start!
