Alex Trim on Instagram: "Dongpo Pork 500g Skin on pork belly 1/2oz ginger sliced 6 scallions sliced 1.5 cups shaoxing wine 1Tbsp @algaecookingclub 3Tbsp rock sugar 5Tbsp soy sauce 1 whole star anise -Trim pork to even flatness -Torch skin on pork and wipe to remove and hair etc. -Boil and skim pork in water for 20 minutes -Add oil, sugar, ginger, and scallions to a pot. -Saute over medium heat for 3 minutes while stirring -Add wine and soy and stir, bring to the boil. -Add pork skin side down and add water to cover. -Bring to a simmer and cover. Cook for 90 minutes with the lid slightly cracked. -Open lid and flip pork, cooking 90 more minutes with the lid cracker. The sauce should be reduced heavily and syrupy. Continue to simmer uncovered if not at the desired thickness. -Remove pork
