Asian Lettuce Wraps Ingredients: 14 oz 93% fat free lean ground beef - should yield 10 oz cooked (2 Lean) 3 cups of shredded cabbage or bagged cole slaw mix (6 greens) 1 tablespoon soy sauce (3 condiments) 2 teaspoons packaged szechwan seasoning mix (3 condiments) *See note below Add any additional water iceberg lettuce leaves (optional) Directions: Get a wok (or non stick pan) very hot. Cook the meat and break it up into very small pieces. When its no longer pink, add the cabbage and pour the sauce over mix. Continue cooking on high heat just until the cabbage starts to wilt. I sprinkled red crushed pepper on it. 2 Servings with 1 Lean, 3 Greens, and 3 Condiments per Serving * The Szechwan seasoning mix I found in my local grocery store had 3 g of carbs per 2 teaspoons which is one serving size marked on the package. I figured it was 3 condiments because 3 g of carbs is the max we are allowed per day in condiments. If there is another package of Asian seasoning that has less carbs, feel free to use more seasoning. Also, you could always leave out the soy sauce and use 4 teaspoons of seasoning mix.

Mexican Beef Egg Burrito Ingredients: 2.5 oz 93% Ground Beef, cooked (1/2 Lean) 1 Light Queso Fresco and Chipotle Laughing Cow Cheese (1/2 Healthy Fat) 1/4 cup Rotel Tomatoes or Diced Tomatoes (1/2 Green) 1/2 tsp Taco Seasoning (.75 Condiments) 1 cup Egg Beaters (1/2 Lean) 1 tbsp Salsa (1 Condiment) 1 tbsp Jalapenos, chopped - Optional (1 Condiment) Directions: Combine cooked ground beef with, tomatoes, laughing cow cheese and taco seasoning until combined over medium high heat. Set aside. Spray a non-stick skillet with cooking spray over medium high heat. Add egg beaters. When one side is done, flip to cook the other side like an omelet. Place the omelet on a plate. Add ground beef mixture to the center and fold one side over the meat mixture. Then fold the other side over the meat to form a burrito. Top with 1 tbsp of salsa and 1 tbsp of jalapenos. I used chipotle salsa and it tasted delicious! 1 Lean, 1/2 of 1 Green (you still need to add 2 1/2 Greens), 2.75 Condiments and 1 /2 Healthy Fat

Broiled Sea Scallops Ingredients: 9 oz Dry Sea Scallops - should yield 7 oz (1 Lean) 1 tbsp Land O' Lakes Spreadable Light Butter with Canola Oil (1 Healthy Fat) 1 tsp Olive Oil (1 Healthy Fat) 1/8 tsp Garlic Powder (1/2 Condiment) 1/8 tsp Onion Powder (1/4 Condiment) 1/8 tsp Paprika (1/4 Condiment) 1/8 tsp Starport's Hot and Spicy Seasoning or Ground Cayenne Pepper (1/4 Condiment) Directions: Combine seasonings in a small bowl. Sprinkle seasoning over scallops and toss to coat all sides. Combine olive oil and butter in another small bowl. I used spreadable butter so it blended nicely with the olive oil without me having to microwave it. Pour butter and olive oil mixture over scallops and stir to combine. Place scallops on broiler pan. Broil on high for about 12-14 minutes or until done; turning every 4 to 5 minutes. Temperature should reach 160 degrees if you want it well done but medium well is 145 degrees. They should be milky white or opaque and firm when done. Make sure you do not over cook them, otherwise they will be rubbery. Serve with your favorite veggies. I served them on top of a salad with Walden Farms Sesame Ginger dressing. It was delicious! Enjoy! 1 Lean with 1.25 Condiments and 2 Healthy Fats

Italian Meatballs Ingredients: 21 oz 93% reduced fat ground beef - should yield 3 - 5 oz portions cooked (3 Leans) 2 tbsp reduced fat parmesan cheese (2 Condiments) 1 tsp basil leaves (1 Condiment) 1/4 cup egg beaters 1 tbsp parsley flakes (1 Condiment) 1/4 tsp garlic powder (2 Condiments) 1/4 tsp pepper (1/2 Condiment) 1/4 tsp fennel - optional (1/2 Condiment) 1 1/2 cups Italian diced tomatoes - less than 5 grams of carbs per 1/2 cup (3 Greens) Directions: Preheat oven to 350 degrees. Combine all ingredients except the diced tomatoes in a bowl until combined. Form balls from the meat. Bake for 20 minutes or until done. Measure out 5 oz of cooked meatballs and add 1/2 cup of Italian diced tomatoes in a small saucepan over medium heat until heated thoroughly. I like to use a fork and smash the diced tomatoes so it resembles a chunky marinara sauce. Serve with 1 cup spaghetti squash (2 Greens) or make a meatball sandwich with the revolution rolls (1/3 Lean and 1.33 Condiments)! If you eat it with the revolution rolls, make sure you add 2 more greens! 3 Servings with each serving having 1 Lean, 1 Green, and 2.33 Condiments (No Healthy Fat required)
