Fragrant dill rice is a natural accompaniment to salmon, and a complete meal of the two is made easy here by baking them together in one dish. Add fresh or dried dill to basmati rice, which is eventually topped with salmon covered in a tangy, sweet and spicy paste of mayo, lemon zest, honey and dried chile flakes. To ensure the rice is perfectly fluffy without overcooking the fish, the grains are baked until most of the water is absorbed before the salmon is added over the top.

Ingredients:
- 1 salmon fillet
- 1 lemon 
- Olive oil
- Flakey salt
- 10 pitted castrelavano olives
- 3 artichoke hearts
- 1 tbsp capers 
- Rice cooked in ghee & bone broth*
- Dill 
- Lemon 
- Flakey salt

*bone broth rice
- 1/2 cup jasmine rice
- 1 cup bone broth
- 1 tbsp ghee

Recipe:
1. Preheat oven to 370 Degrees F
2. Thinly slice lemon
3. Add salmon to baking dish and cover with olive oil, flakey salt, and lemon slice (also squeeze som elemon juice)
4. Place in oven for ~20 minutes 
5. While salmon is cooking, cook bone broth rice: melt ghee, stir in rice, and then top with bone broth, bring to boil then lower heat and cover (should cook in about 15 minutes)
6. Chop up olives, capers and artichoke hearts, set aside
