1.5 Lbs lamb rack, cut into chops
8 cloves of garlic, minced 
2 sprigs rosemary, chopped
3 sprigs thyme, chopped
2 Tbs avocado oil
2-3 Tbs unsalted butter 
1 1/2 tsp pink salt
1/2 tsp black pepper 
Extras:
Parsley for garnish 
Avocado oil for cooking
1. Cut the lamb rack into individual chops. Pat them dry with paper towels, then place into a dish. Season by adding the minced garlic, herbs, salt, pepper, and 2 Tbs of oil. Make sure the chops are evenly coated on both sides. Placed into the refrigerator to marinade for at least an hour.
2. Turn oven on to broil on HIGH. Now, to a hot cast-iron skillet or nonstick skillet add 1 Tbs oil. Place chops in a single layer and cook for 2 minutes on each side just to brown the chops.
