Welcome to Millet Monday! 🌾 Today’s recipe is a classic Indian household breakfast - but we make it with foxtail millet poha. It is light, healthy and so yum!

Let’s get to making it:

Ingredients 
Foxtail Millet Poha - 1.5 cups I tried the @cleancrunch.co one 
Oil - 2 tsp
Mustard seeds - 1 tsp
Jeera - 1 tsp
Green chilli chopped - 2 no. 
Curry leaves - 7-8 no. 
Onion diced - 1 no. 
Potato diced - 1 no. 
Salt - as needed
Haldi - 1 tsp
Carrot diced - 1 no. 
Beans - 5-6 no. 
Peanuts - garnish
Lemon juice - 1 whole

Method 
1. In a kadhai, add oil and heat it
2. ⁠Add the mustard seeds, jeera and curry leaves 
3. ⁠Once they start spluttering, add the green chillies

Malvika Hada Kumar | Recipe Developer on Instagram: "FOXTAIL MILLET IDLI 🤩🥧 - I got a lot of requests for this Idli recipe, when I posted foxtail millet dosa a few days ago. This is extremely healthy to include in your everyday breakfast and is great for diabetic people too. Serve it with your favourite chutney and sambar.   Ingredients -  2 cups Foxtail millet 1/2 cup White whole urad dal  1 tsp fenugreek seeds Water, as required Salt, to taste Ghee/Oil, to grease the moulds  Instructions -  Add foxtail millet, urad dal and fenugreek seeds in a bowl. Rinse it with water 3-4 times and then soak in enough water for 6 to 8 hours. Once done, grind it into s smooth paste and whisk with hands for 5-6 minutes. Cover and keep it for fermentation overnight.  Next morning, add salt and mix well.
