My all time favourite New Zealand slice. It has a cake-like shortbread base which is smothered in berry jam and fresh berries and crowned with a fluffy coconut meringue topping. Rumour has it that this very slice was made for Queen Victoria’s daughter, Princess Louise at her wedding. No wonder I feel dainty when I eat it! Raspberry Slice - not this picture. Old school recipe - really is soft, really tastes like bought one. USE DECENT JAM. Craigs at the least.. Recipe: 1/4 lb butter, 2 oz sugar -beat to a cream, then add 1 tbs milk, 1 cup flour, 1 tsp baking powder. Roll out half, spread with raspberry jam, roll out other half to match and place on top.
