•Ingredients:
- 2 (or more) rice cakes
- 1/2 avocado
- 1 egg
- Hummus
- Cucumber slices
- Some olive oil
- Salt & pepper
- Sesame seeds (for garnish)

Instructions:
1. Prepare the Avocado Mash:
 - In a bowl, mash the avocado with a fork.
 - Hard-boil the egg, peel it, and mash it into the avocado mixture.
 - Add a drizzle of olive oil, salt, and pepper to taste. Mix well.

2. Assemble the Rice Cakes:
 - Spread a layer of hummus on each rice cake.
 - Top the hummus with the avocado and egg mash.

3. Add the Finishing Touches:
 - Place a few cucumber slices on top of the avocado mash.
 - Sprinkle sesame seeds over the cucumber slices.

4. Enjoy!

If you like toasts - don’t sleep on rice cakes!! They’re prob my faaave gluten free alternative and tbh I like them even more than toasts 🤤 they’re crunchy, airy, light yet still filling. And very minimally process my rice cakes are made of 1 single ingredient - whole grain brown rice! That’s it☝🏼

The topping possibilities are literally endless! Here are 4 of my go to:

💛 Tofu Scrambles & Kimchi
6 oz extra firm tofu
6 oz silken tofu
1 scallion
1/2 tsp turmeric
1 tsp Kala namak (black salt)
1 tbsp nutritional yeast
Salt n pepper to taste

🥑 Beet hummus & avocado
1 roasted beet
1 can chickpea
2 tbsp tahini
2 tbsp extra virgin olive oil
1 tsp cumin
