The quintessential tea time snack in so many homes across Maharashtra. I love the crispy exterior and squishy centre of these sabudana vadas. And they are so easy to make. Dip them into a Coriander Chutney or even tomato ketchup and you'll have a snack you go back to all the time.

2 cups Sago or Sabudana
3 cups water 
1/2 cup roasted crushed peanuts 
1 large boiled potato 
1 tsp cumin 
1 green chilli
1 tbsp coriander 
1/2 tsp sugar 
Salt, to taste 

1. Wash and soak the Sabudana overnight. 
2. Mix all the ingredients and mash gently. Shape into little pucks and deep fry 2-3 minutes until golden on the outside. 
3. Enjoy with ketchup or chutney!
