Ingredients:

- 1 large onion
- 2 large ripe tomatoes
- 4 to 5 spicy chilies (optional)
- 3 eggs
- @ndcmuscat olive oil
- liquid cheese
- salt & pepper
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp paprika
- 1 tbsp tomato puree 

- start by chopping the veggies. Saute the onion in a drizzle of olive oil.

- once the onion starts to brown add the tomatoes. Season with salt. Pepper. Cumin. Coriander. Paprika. Tomato puree and any spices that you prefer.

- keep cooking the tomatoes on medium low till dissolved. 

- switch off the heat then crack the eggs in the mixture. Mix it thoroughly and add a splash of water.

- turn the heat back on low and spread the cheese on top.

- cover and let it cook for 3-5 minutes.

Ingredients:

	•	2 pounds ripe tomatoes (about 12 )(Roma or vine-ripened)
	•	1 large onion, quartered
	•	2 head of garlic 
	•	4 tablespoons olive oil
 •  1 red bell pepper
 •  3 celery stalks
 •  2 carrots
	•	Salt and freshly ground black pepper, to taste
	•	handful of fresh basil
	•	handful of fresh thyme
	•	1 cup vegetable or chicken broth
	•	1 teaspoon sugar (optional, to balance acidity
	•	1/2 cup heavy cream 
	•	Fresh basil leaves, for garnish

Instructions:

	1.	Preheat Oven: Preheat your oven to 400°F (200°C).
	2.	Prepare Vegetables: Cut the tomatoes in half and remove the seeds if desired for a smoother soup. Place the tomatoes, onion quarters, carrots bell pepper, celery and garlic cloves on a baking sheet
