Rolling your pasta this way is gonna give you a better texture than rolling with a machine, you’ll have a rough result perfect to absorb better the sauces.  If your dough sticks to the counter during the process feel free to add as much flour as you need.  There’s no perfect thickness cause your taste is what metter the most but there are some guidelines depending on what you’ll use your pasta for: For lasagna you want it extra thin, for stuffed pasta the wetter is the filling the thicker will be the pasta. For long shape noodles reach the thickness you like the most.
