This one-pot prawn laksa soup is light and refreshing! It’s easy to digest and doesn’t leave you with that afternoon slump or bloat. It’s also a gluten and dairy-free fish. 

2 garlic cloves, finely chopped
2 tbsp ginger, finely chopped 
2 ½ tbsp thai red curry paste
150g mangetout
1/2 stock cube
400ml low fat coconut milk 
1 tbsp fish sauce
100g rice noodles
2 limes, juice of 1, the other halved
150g cooked king prawns
½ small pack coriander, roughly chopped. 

1. Heat the oil in a saucepan and cook garlic and ginger for 1-2 mins. Add the curry paste and cook for a further minute. Combine stock cube with 700ml boiling water and mix. Pour the stock into the pan and stir.
