We've covered chutneys, dosa and now it's time for another favourite South Indian breakfast dish - Idlis.

Like dosas, these are usually a two day process, but here's my Instant go-to version that's healthier and ready in minutes. Because of the oats these Idlis are a little denser than ordinary rice and lentil idlis, but so so tasty! 

PS: a recipe for traditional Idlis can be found in my Hoppers cookbook. 

1 cup oats
1/2 tsp mustard seeds
5-6 curry leaves
1 green chilli
1 tbsp oil
1 cup semolina 
1/2 tsp turmeric
1/2 carrot
2 tbsp green peas
1.5 tbsp yoghurt
1/2 tsp baking powder 
Water, as required
Salt, to taste

It is a great alternative, if you are looking to try a different dosa sometimes that the traditional dosa made with rice and urad dal. This one turns out super crisp and I am sure once you have it you won’t be able to stop at just one. Serve with your favourite chutney.   Ingredients -  1 cup quinoa 1/2 cup oats 1/4 cup chana dal 1/2 cup urad dal 1/2 cup masoor dal 1 tsp fenugreek seeds 2 green chillies 1 inch ginger Handful coriander leaves Salt, to taste Water, as required  Instructions -  Add quinoa, oats, chana dal, urad dal, masoor dal, fenugreek seeds in a bowl and rinse it well. 1. 1 Cup oats powder (Take oats , Grind them and powder Ready, Store in airtight container )
2. Add curd , Veggies , Green Chillies and coriander as shown in the Video.
3.Add masalas as mentioned in the video 
4. Add Mustard seeds and Curry Leaves and Mix everything together 
5. Now take nonstick or Cast Iron Tawa put little oil spread the batter nicely like you make dosa .. Cook from both sides make it crispy for extra Crunch and Ready to enjoy.
