These raised “petals” of buttercream add so much dimension to your cakes, and... | By Rosie's Dessert Spot | For today's cake I'm using a white chocolate mud that has some raspberries baked through it. Basically I just add some frozen raspberries to the cake batter while the mixture is running. And then bake it off as usual. This is a bring of buttercream that I've used and then I'm filling in with a white chocolate ganache. Um that's been flavoured with frozen raspberries as well. Once all your layers have been stacked take that buttercream over the top of the cake and the sides creating a really thin layer to trap in your crumbs. Smooth it out. Drag that top lip towards the middle and then refrigerate for 20 minutes. For the petals, I've used buttercream as well, colored it with gel food color and I'm just running it back and forth under my palette knife. This is going to remove any teeny tiny micro bubbles from your buttercream to create super smooth looking petals. Collect it on your palette knife on a 45 degree angle just kind of back and forth. And then when you're ready press down firmly on your pellet knife and kind of pull it towards you. This will create that pellet knife shape indent. Once you've practiced enough and you are confident, grab some buttercream in a lilac color if you're going with this color scheme. Smooth it out like you did before and then drag that top lip towards the middle. I did not refrigerate after this point. I just went straight on with my pellet knife petals. I found it a lot easier to peel upwards. So I've taken my palette knife. I pressed it firmly against the cake and then I'm peeling it up and away. You can also peel it to the side so you angle your brush at about a 45 degree angle to create those lighter colour petals. And that's basically it. You just keep doing this around the cake. Overlap them if you like to just try and create like a more of a floral shape. This becomes really fun and really addictive once you get the hang of it. I love this sort of yam technique. I've chosen three different purple colours and I've also added them on the top of the cake as well just to balance it out a little bit. There are different sized palette knives as well so definitely experiment with the different shapes and sizes you have available. I've taken some color tricky as well and just tossing them onto the cake so that they stick to the wet buttercream. I also found a luster dust pump bottle that I had on hand with some edible luster shimmer or like glitter. Just going to pump that all over the cake just to make it look a little bit more alien but that's it. I hope you enjoy it and you give it a go. I would love to see your creations.
