I love streetside Kathi Rolls, and this is one of the easiest versions of them. I've kept it simple but go ahead and add any filling of your choice if you feel like.

For the paratha/bread:
500g Plain flour
260g Warm water
20g Ghee
10g Salt
10g Sugar

To fill:
Green peppers, cucumbers, eggs, green chillies, fresh and pickled onions, Chaat masala

1. Mix all the ingredients to make the paratha and knead for about 10 minutes until you have a smooth, soft dough. Rest for 10 minutes and roll out as per the video.

2. Then cook the paratha with eggs and green chillies.

3. Build your rolls with sauted green peppers, cucumbers, pickled onions, Chaat masala and any other filling of your choice.
