I have many kinds of madeleine pan right now, the lovely pattern makes me happy each time that I use them. The classic one is always my favorite (but I just can't stop buying new patterns, hehe). Refrigerate for at least 4 hours or overnight.  Coating 100g dark chocolate   Madeleines Dry ingredients  1/2 cup cake flour *75g  1 tbsp cornstarch *8g  8g cocoa powder  1/4 cup sugar of choice *50g  1 tsp baking powder *4g   Wet ingredients  75g yogurt of choice  1/2 tbsp maple syrup *10g  1 tsp vanilla extract *4g  75g dairy-free butter, melted & room temperature   In a large mixing bowl, combine all dry ingredients and set aside.  Whisk together wet ingredients. Then pour wet ingredients to dry. Gently mix until just combined.
